Wash the rice flakes quickly as the flakes absorb water
Place them in a colander or strainer and set aside to soften (approximately 15 min)
Heat the oil in a frying pan and fry the peanuts till they darken slightly
Remove the peanuts with a slotted spoon and set aside
In a new pan, add ½ tbsp of coconut oil, garlic, green chilli, curry leaves, mustard seeds and cumin seeds
Sauté till the onions become translucent
Add chopped beans and mix well
Add the Rasamusu packet and turmeric if you wish for a deeper yellow colour and stronger turmeric flavour; stir till it has mixed well
Add the rice flakes, mix, and cover the pan; reduce the heat to low
Once all the rice flakes are heating up, stir. If it is too dry sprinkle some water and cover to steam the flakes
Remove from the heat - the flakes should have become soft and warm
Correct the seasoning if required.
Optional – Fresh lemon juice can be added
Garnish with the coriander leaves and peanuts
Serve warm
Optional - fresh coconut could be served on the side
