Yellow Rice

  • Thin MAGGI Coconut Milk (1 1/2 tbsp to 1 1/2 cups of warm water)
  • Thick MAGGI Coconut Milk (3 tbsp to 1 1/2 cups of warm water)
  • 500g keeri samba (washed & drained)
  • 1 cinnamon stick
  • 3 cardamoms
  • 1 tsp cloves
  • 1 1/2 tsp salt
  • 1 tsp pepper seeds
  • 1 tsp turmeric powder
  • 50g cashew nuts
  • 50g raisins
  • 1 tbsp coconut oil
  • 2 inch lemongrass stem
  • 1 inch pandan leaf
  • 1/2 onion (thinly sliced)

Step 1

Place a pan on the stove and add oil.

Step 2

Add onions, pandan, lemongrass, cardamom, cloves, cinnamon and pepper

Step 3

Add the rice and mix well.

Step 4

Add both the thick and thin MAGGI coconut milk.

Step 5

Add turmeric powder and salt and stir.

Step 6

Cover and cook over medium heat for 10-12 mins or until the rice is tender.

Step 7

Add the cashew nuts and raisins to the cooked rice and gently mix.

Done
