Minestrone

  • 3tbsp oil
  • 50g onion (diced)
  • 20g garlic (chopped)
  • 100g green bell pepper (diced)
  • 100g red bell pepper (diced)
  • 100g eggplant (diced)
  • 50g green zucchini (diced)
  • 50g yellow zucchini (diced)
  • 100g carrot (diced)
  • 250g tomato (diced)
  • 80g pasta (any variety – if long pasta break into small 2” pieces)
  • 1 litre Maggi chicken stock (3 cubes)
  • 4 tbsp tomato paste
  • 4 tsp sugar (add more to taste)
  • Salt & pepper to taste
  • 20g fresh basil to garnish

Step 1

Heat oil in a pot over medium heat

Step 2

Saute onion, garlic, bell peppers, eggplant, carrot and zucchini

Step 3

Add tomato paste; stir and cook till vegetables begin to caramelise.

Step 4

Add sugar, pasta and stock

Step 5

Simmer for 30 – 45 min; remove any froth that appears on top

Step 6

Season; if too acidic, add more sugar

Step 7

Remove from heat and garnish with fresh basil
